This salad is perfect for those days when you want something healthier or if you are starting a new eating regime. Packed with detoxing foods to eliminate inflammation and regulate the body.

  • 2 cups kale or other greens, chopped
  • ½ carrot, sliced into ribbons withpeeler
  • ½ red pepper, sliced
  • ½ cup cup blueberries
  • ½ cup cup fresh parsley, chopped
  • ½ cup cup chopped walnuts


  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp raw honey (or maple syrup)
  • Juice from 1 lemon
  • Salt and pepper to taste


  • Combine salad ingredients into a bowl.
  • Whisk together dressing ingredients and pour over top.


Note: Only add protein if you are not detoxing.
