Squash & Ginger Soup
This is a flavourful, hearty soup that is super quick to prepare. It becomes a beautiful, thick consistency that is great for an appetizer or main dish.

- 1 tbsp Butter
- 1 Each: Onion, Celery Stick and Carrot, Diced
- 1 medium Butternut Squash peeled and cubed
- 1 tbsp Chopped Fresh Ginger
- 2 cloves Chopped Garlic
- 1 tsp Salt and Freshly Ground or Cracked Pepper
- 4 cups Gluten-Free Chicken Broth
Melt the butter in a large saucepan.
Add onion, celery, carrot and squash and sauté for about 5 mins until slightly softened and golden.
Add ginger, garlic, salt and pepper and sauté another 2 minutes.
Add broth and bring to a boil. Reduce heat and simmer about 15 mins, until squash is very soft, .
With an immersion blender, puree soup until smooth.
Season with some additional salt andpepper if necessary.
Serve with a dollop of yogurt or sour cream, if desired.
