Squash & Ginger Soup

This is a flavourful, hearty soup that is super quick to prepare. It becomes a beautiful, thick consistency that is great for an appetizer or main dish.

  • 1 tbsp Butter
  • 1 Each: Onion, Celery Stick and Carrot, Diced
  • 1 medium Butternut Squash peeled and cubed
  • 1 tbsp Chopped Fresh Ginger
  • 2 cloves Chopped Garlic
  • 1 tsp Salt and Freshly Ground or Cracked Pepper
  • 4 cups Gluten-Free Chicken Broth


  • Melt the butter in a large saucepan.
  • Add onion, celery, carrot and squash and sauté for about 5 mins until slightly softened and golden. 
  • Add ginger, garlic, salt and pepper and sauté another 2 minutes.
  • Add broth and bring to a boil. Reduce heat and simmer about 15 mins, until squash is very soft, .
  • With an immersion blender, puree soup until smooth.
  • Season with some additional salt andpepper if necessary.
  • Serve with a dollop of yogurt or sour cream, if desired.
