Coconut Lime Drumsticks

Nothing says summer like coconut and lime! This maranade can be used on chicken thighs, skewers and pork in addition to drumsticks. Happy grilling!

  • 16 chicken drumsticks
  • 1 400ml can coconut milk
  • ½ cup brown sugar
  • cup chopped shallot
  • 2 tbsp lime juice
  • ¼ cup gluten-free soy sauce
  • 3 tbsp minced garlic
  • 3 tbsp minced ginger
  • 1 tsp salt


  • Preheat oven to 375F.
  • Place drumsticks in a large oven dish in single layer.
  • Mix together remaining ingredients in a large bowl and pour over chicken.
  • If you have time, let marinade for 1 hour or overnight. If not cook immediately!
  • Bake for 1 hour, turning about half waythrough.  Serve with extra sauce at the table!
