Coconut Lime Drumsticks
Nothing says summer like coconut and lime! This maranade can be used on chicken thighs, skewers and pork in addition to drumsticks. Happy grilling!
Ingredients
- 16 chicken drumsticks
- 1 400ml can coconut milk
- ½ cup brown sugar
- ⅓ cup chopped shallot
- 2 tbsp lime juice
- ¼ cup gluten-free soy sauce
- 3 tbsp minced garlic
- 3 tbsp minced ginger
- 1 tsp salt
Instructions
- Preheat oven to 375F.
- Place drumsticks in a large oven dish in single layer.
- Mix together remaining ingredients in a large bowl and pour over chicken.
- If you have time, let marinade for 1 hour or overnight. If not cook immediately!
- Bake for 1 hour, turning about half waythrough. Serve with extra sauce at the table!
