GLUTEN-FREE BRAZILIAN CHEESE PUFFS

Brazilian Cheese Puffs

These puffs put a twist on a traditional yorkshire pudding recipe by adding your favorite cheese. They are great with soup of roast beef.

Equipment

  • 1 small or mini muffin pan

Ingredients
  

  • ½ cup Grated Cheese (such as cheddar or tex mex)
  • 1 large Egg
  • cup Olive Oil
  • cup Milk
  • 1 tsp Salt
  • cups Tapioca Flour

Instructions
 

  • Heat oven to 400℉.  Grease a mini muffin pan.
  • Place all the ingredients into a food processor or blender and pulse until smooth.
  • If prepping ahead, reserve batter in refrigerator until ready to cook (up to 2 days).
  • When ready to cook, stir batter to re-blend any settled ingredients. Fill muffin cups about ¾ full.
  • Bake for 15 – 17 minutes until puffed upand lightly browned.
